In 2021, Rapha approached Alberto, who was running his pop up Grano, with the idea of collaborating on a joint pop up at the Old Vic Theatre in Bristol.
What started as a professional partnership soon became something bigger, shaped by a shared love of cooking, eating and creating memorable food experiences. Through countless conversations about hospitality, food, where they had come from and where they wanted to go next, they realised they were both looking for something more.
What they had was good, but they knew it could be better.
While Rapha continued refining his pizza craft, Alberto focused on growing Grano. Along the way, they found a shared ethos: relaxed perfectionism. The idea that high standards and genuine hospitality can sit side by side.
That principle became the heart of what would eventually become Gigi’s.
The vision for Gigi’s took shape on pizza eating trips through London, Rome and New York City, where they visited more than 50 pizza shops. Inspired by the world’s great pizza capitals, they set out to create a place that balances tradition, creativity and a love of community.
At Gigi’s, they serve 12” and 18” whole pizzas and pizza by the slice, alongside a selection of local beers, natural wines and small batch spirits.
They keep it simple: great food, warm hospitality and a welcoming space for friends old and new.
At Gigi’s, we celebrate the journey of pizza: from its humble beginnings to its exciting future. We believe that by honouring tradition, embracing evolution, and encouraging innovation, we’re helping to keep a beloved culinary craft alive and thriving.
The Past
We pay tribute to the Italian immigrants who brought the traditions of Naples to New York between 1880 and 1930. From those roots came the iconic New York slice—simple, hearty, and made to feed a bustling city. We honour this history as the foundation of everything we do.
The Present
While we love tradition, we’re not bound by it. We believe authenticity isn’t about rigid rules; it’s about keeping pizza vibrant and relevant. We take inspiration from the classics while leaving room for creativity, new ideas, and bold flavours.
The Future
We believe pizza’s future lies in diversity and innovation. As the world changes, so does food—and we’re excited to explore new approaches, welcome different cultures and influences, and inspire the next generation of pizza lovers.
